“The History and Language of Pasta” deals with the origin of different varieties and shapes of dry and fresh pasta within the context of Italian culture from Renaissance to today and why pasta has become an international success.
Dr. Balducci, who resides in Montauk, is a retired professor from Stony Brook where he taught courses in Italian, Cinema and Arab culture.
